Schreiber Foods, the employee-owned global dairy company with more than 9,000 staff and over $7 billion in sales, is headquartered downtown, and American Foods Group anchors beef processing with more than 4,500 workers nationally from its Green Bay base.

Finance and insurance run deep for a city this size. Associated Banc-Corp, the largest bank holding company based in Wisconsin with roughly $42 to $43 billion in assets, has its head office downtown, sitting alongside a long-standing health-insurance and claims-processing employment base. Four hospital systems, HSHS St. Vincent and St. Mary's, Bellin Health, and Aurora BayCare, anchor a substantial healthcare sector, all of it running under HIPAA. Food processors operate under USDA FSIS and FDA inspection, and banks and insurers under GLBA, even though Wisconsin has no comprehensive consumer-privacy statute yet.

The work that consumes hours here is unusually document-heavy and operationally repetitive: mill production and maintenance logging, food-safety and lot-traceability paperwork, loan and claims intake, patient access and recall outreach, port and freight documentation, and game-day and tourism inquiry handling. The Port of Green Bay, the westernmost on Lake Michigan, moves about 1.6 million tons a year through a supply chain tied to construction and manufacturing, and the community-owned Green Bay Packers drive a tourism and hospitality economy that spikes hard on event weekends.

Green Bay operators that automate food-safety documentation, claims and loan processing, patient access, and after-hours customer service are pulling ahead of peers still keying everything by hand. With NWTC training nearly 40,000 students a year and UW-Green Bay supplying degree-level talent, the region has the workforce to run production AI well, and the practical, manufacturing-rooted business culture to adopt it quickly.
